{"id":163,"date":"2016-07-29T11:49:39","date_gmt":"2016-07-29T11:49:39","guid":{"rendered":"http:\/\/thermolive.es\/blog\/?p=163"},"modified":"2025-01-08T18:43:08","modified_gmt":"2025-01-08T18:43:08","slug":"linea-fria-y-linea-caliente","status":"publish","type":"post","link":"https:\/\/thermolive.es\/blog\/linea-fria-y-linea-caliente","title":{"rendered":"\u00bfQu\u00e9 es la L\u00ednea fr\u00eda y l\u00ednea caliente?"},"content":{"rendered":"<h2 style=\"text-align: center;\">Temperatura para el transporte de l\u00ednea fr\u00eda +4 \u00baC<br \/>\nTemperatura para el transporte de l\u00ednea caliente + 65\u00baC<\/h2>\n<p>En el <strong>sistema de &#8216;l\u00ednea caliente&#8217;<\/strong>, tras elaborarse los platos mediante procesos de cocci\u00f3n m\u00e1s o menos convencionales, estos se mantienen calientes (a m\u00e1s de 65\u00baC) hasta su consumo sin romper en ning\u00fan momento la cadena de calor.<\/p>\n<p>Estos rangos de temperaturas garantizan la seguridad del alimento que ha sido higienizado por el tratamiento t\u00e9rmico, ya que impiden la proliferaci\u00f3n de microorganismos. Sin embargo, se corre el riesgo de que procedimientos incorrectos durante la cadena, provocando p\u00e9rdidas parciales de calor con rangos de temperaturas templadas en las que los microorganismos podr\u00edan desarrollarse peligrosamente.<\/p>\n<p>Por otro lado, este sistema necesita de contenedores isot\u00e9rmicos para garantizar las temperaturas en frio o calor.<br \/>\nLas t\u00e9cnicas de cocina en <strong>&#8216;l\u00ednea fr\u00eda&#8217;<\/strong> necesita tambi\u00e9n de contenedores isot\u00e9rmicos para aumentan los niveles de seguridad en restauraci\u00f3n, y aportan ventajas espec\u00edficas en los comedores escolares. Los sistemas de &#8216;l\u00ednea fr\u00eda&#8217; combinan la cocina tradicional con los modernos sistemas de conservaci\u00f3n, en los que tras la elaboraci\u00f3n del plato, \u00e9ste se enfr\u00eda r\u00e1pidamente mediante modernos abatidores de temperatura, manteni\u00e9ndose en refrigeraci\u00f3n hasta el momento del consumo sin romper la cadena de fr\u00edo, en el que se vuelve a calentar a trav\u00e9s de <strong>hornos regeneradores<\/strong>. El <strong>abatimiento r\u00e1pido<\/strong> de temperatura es fundamental en este proceso, ya que permite reducir tanto el riesgo de crecimiento de microorganismos pat\u00f3genos como de formaci\u00f3n de toxinas. Tambi\u00e9n resulta indispensable, adem\u00e1s de no romper en ning\u00fan momento la cadena de fr\u00edo, que el plato se consuma inmediatamente despu\u00e9s de su regeneraci\u00f3n que, por tanto, deber\u00e1 realizarse en el mismo centro de consumo. Principales pasos El tipo de cocina que acabamos de detallar se resume en los siguientes pasos:<\/p>\n<ul>\n<li><strong>Materias primas frescas<\/strong>, y de primera calidad y manipulaci\u00f3n por parte del personal cualificado siguiendo las m\u00e1ximas garant\u00edas de higiene.<\/li>\n<li><strong>Elaboraci\u00f3n de los men\u00fas mediante tratamientos t\u00e9rmicos<\/strong> que garanticen temperaturas m\u00ednimas de 70\u00baC en el centro de los alimentos.<\/li>\n<li><strong>Enfriamiento r\u00e1pido mediante abatidores.<\/strong> Estos equipos son capaces de reducir la temperatura de los productos de 70\u00baC a 10\u00baC (en su parte central) en aproximadamente 50 minutos. Esta reducci\u00f3n debe llevarse a cabo siempre, y por seguridad, en un tiempo inferior a las dos horas.<\/li>\n<li><strong>Envasado con garant\u00edas higi\u00e9nico-sanitarias<\/strong> normalmente mediante diferentes sistemas de termosellado (vac\u00edo, atm\u00f3sfera modificada&#8230;) dependiendo del tiempo programado de conservaci\u00f3n.<\/li>\n<li><strong>Identificaci\u00f3n de los envases.<\/strong> Refrigeraci\u00f3n de los envases a 4\u00baC. Transporte en veh\u00edculos refrigerados hasta el lugar de consumo.
